Chilled No-Cook Carrot Soup

What this Chilled No-Cook Carrot Soup lacks in vibrant orange color, it makes up for in flavor and ease of assembly. If you have edible flowers in your garden all the better, but otherwise just use a bit of chopped dill and scallion to add some contrasting color to the soup.


This makes one bowl of soup but can easily be scaled up for company.



2 carrots, (if organic just wash and cut off both ends, if not, peel as well)

1 generous handful of dill, steams and fronds both

3/4 cup of very cold water, vegetable stock or chicken stock

1/4 cup of cream

Juice from half a lemon

Salt and pepper to taste

Cream, chopped dill, chopped scallion, edible flowers etc. for garnish (optional)


Chop each carrot into four pieces, six if very large.


Add everything to your blender or Vitamix and blitz until smooth. Add more stock or water if you prefer a thinner consistency.


Pour into a chilled bowl and serve drizzled with a bit of additional cream and the garnishes mentioned above.
