Deviled Ham

This was the best dish of a family picnic that I orchestrated, a reminder of our childhood when deviled ham from the grocery store (the little tin with the devil on it) was a rare treat. This is the grown-up version of this.
I will be honest - for the picnic I served it on tea sandwiches of white bread with the crusts cut off and a sprinkle of radish micro greens, but shoveled the delicious leftovers down my throat in thickly spread doorstop sized sandwiches. This is good.
1 lb diced ham (I used a ham steak)
1 Tbsp chopped cornichons or sour pickles
1 Tbsp finely chopped Italian parsley
1/2 c mayo (big fan of Hellman's here)
1 Tbsp Dijon mustard
1/2 tsp hot sauce
1 tsp Worcestershire sauce
Finely chop the ham or, better yet, briefly pulse it in your food processor.
Tip it into a bowl and combine with the rest of the ingredients.
Taste and adjust seasoning if needed - a bit more hot sauce, a bit more mustard, or a splash of pickle brine,
