This riff on a Green Goddess dressing is amazing, and healthy.
I originally used it as a dressing for a sweet potato salad. It was a great idea for an outdoor picnic since, as it contains no mayo, I didn't have to worry about potential food poisoning issues. It also looked very pretty, enveloping the cubed sweet potatoes, diced red pepper, celery and red onion, and chunked hard-boiled eggs.
I have since used it with both regular potato and pasta salad, as a sauce for cold poached fish and warm roasted asparagus, and as a dip for crudites. It was also delicious as a replacement for mayonnaise in a batch of deviled eggs. Basically, this is a workhorse for the summer season.
Feel free to use any variety of herb of which you happen to have an abundance. In the case of the one photographed above, I used 3/4 sorrel, as my sorrel plant has gone slightly wild, and 1/4 Italian parsley, but have made it with every configuration of herb imaginable. You can also add garlic, shallot, or even hot sauce, for a sharper version.
1 ripe avocado
1 cup mixed herbs, leaves only
1 Tbsp rice wine vinegar
Juice of 1/2 lemon
Salt to taste
Place all of the ingredients, along with a tablespoon of ice water, in the blender. Blend until very smooth.
Adjust seasoning if needed.
