Peach Pleasure - Frozen Peach Cocktail

This is a lovely frozen summer drink. You will need a perfectly luscious, ripe peach for the flavor, and frozen peaches from the super market in lieu of ice cubes to make this cocktail an undiluted frozen one.

This makes a generous cocktail. Scale up for visitors.

1 summer peach, peeled and pitted, cut into chunks

2 cups frozen peach slices

1 Tbsp fresh lime juice

1 Tbsp Cointreau

2 oz dark rum

2 tsps maple or orgeat syrup

Place all of the ingredients except for the frozen pieces in a blender. Blitz together until smooth.

Add the frozen peach slices to the blender one at a time until a thick frozen drink ensues.
