Quick and Easy Baltic Salad

This turned out to be a delicious dinner salad that came together really easily on a night when I did not feel like cooking, nor thinking about dinner. By chance, I had everything on hand and the idea came to me as I was gloomily peering in the fridge because I was hungry, in a cranky kind of way.
1 generous handful of baby arugula
1 cold boiled potato, peeled and diced
1 hard boiled egg, cut into wedges
1 portion of boquerones or pickled herring
1/2 shallot, finely diced
1 Tbsp olive oil
2 tsps red wine vinegar
2 tsps Dijon mustard
Place the diced potato in a large bowl. Add the shallot, mustard, oil and vinegar and toss to combine. Set aside for about ten to fifteen minutes to marinate slightly.
Mound the arugula onto a plate. Pour over the potato and the dressing in which it has been marinating.
Top with the egg and pickled fish.
Easy to make but you will feel as though you made an effort when you are done eating this quick and easy Baltic salad.
