Endive Boats with Whipped Gorgonzola

These endive boats with whipped Gorgonzola are the perfect pre-dinner coffee table appetizer. They are delicious, visually striking in presentation and take five minutes to make which, if you are making a special and intricate dinner, is a game changer!
This makes about two cups of dip.
1/2 lb wedge of Gorgonzola Dolce (this tastes good with crumbled grocery store Gorgonzola but, the better the quality of the cheese, the better the dip.)
1 1/2 cups sour cream
Hot sauce to taste
Combine all of the ingredients and blend until as smooth as possible with an immersion blender.
Serve with Belgian endive leaves.
