Fridge and Pantry Pasta Sauce

This fridge and pantry pasta sauce is pretty self-explanatory. I felt like pasta and I had stuff to use in my fridge. This is delicious and endlessly adaptable based on the vegetables and pantry items available. Consider the below but a template.


2 cups roasted vegetables (mine were a mix of roasted eggplant, assorted peppers, onion, and carrot)

1 small can of diced tomatoes, juice and all

2 cloves of garlic

1/2 can of anchovies

1/3 cup grated Parmesan


Basically, just bung everything together in your blender and blend until smooth. Serve it with pasta, adding a bit of the pasta cooking water to it to thin it out a bit and help it better adhere to the pasta.
