My Mom's Chicken Liver Mousse

This is the stuff of which gastro-dreams are made.
My Mom's Chicken Liver Mousse is absolutely delicious, and one of the things that I always request that my mom make when the holidays roll around. The photo looks like one from the '70s, which is probably as long as my mom has been making this for us, but don't let that deter you - this stuff is pure gold with pre-dinner drinks.
l lb. chicken livers, coarsely chopped
1 medium onion, roughly chopped
4 tbsp + 8 tbsp butter
2 tbsp brandy or bourbon
generous 1/2 tsp paprika
generous 1/4 tsp curry powder
3/4 tsp salt
pepper to taste
Melt four tablespoons of the butter in a skillet over medium heat.
Add the onion, chicken livers, and spices and cook until the onion is soft and the livers cooked through.
Set aside and let cool.
When the mixture is cool, blend until smooth along with the remaining butter, softened, and the brandy or bourbon.
Transfer to your serving bowl and chill, keeping in mind that the mixture is very runny and needs to be chilled several hours or overnight.
This freezes well so can be made ahead of time.
