Broccoli Flavor Bomb Pasta

This is the perfect middle of the night jetlag meal. And, come to think of it, it would probably be great for a hangover too...It is simple to make, a carb and cheese fest, and tangy and spicy in the best way -- a broccoli flavor bomb pasta



1/2 head of broccoli, roughly chopped into very small pieces

2 cloves garlic, very finely chopped

1 portion of your favorite pasta (pasta serving size is subjective so over to you for the measurement of that!)

2 Tbsps grated Parmesan

1 Tbsp sour cream

2 tsps butter

2 tsps pickle brine

1/2 tsp red pepper flakes

Salt and black pepper to taste


Put a pot of salted water on to boil and, once it does, cook the pasta for one minute less than indicated in the cooking directions. Drain, reserving one tablespoon of the pasta water.


Five minutes before the pasta is supposed to be ready, start getting your sauce organized.


Met the butter in a large skillet along with the chopped garlic. As soon as the garlic softens and starts to smell delicious, stir in the broccoli and stir to combine. Cook for two minutes, stirring often, before stirring in the red pepper flakes, salt and pepper and the pickle brine to the pan.


Add the sour cream, the pasta water and the grated Parmesan to the pan and stir to combine until the Parmesan has melted and a glossy sauce has formed.


This should be the time when the pasta is ready so drain it and add it to the pan, stirring to combine it with the sauce.


Make sure that everything is heated through before tasting and adding more salt, red pepper flakes or pickle brine as your taste buds require.
