Agrodolce Fig Toast



This made for a delicious lunch. I used Ezekiel raisin bread which worked really well with the figs, but your favorite bread for toast is definitely the way to go here! And make two toasts -- you will think that one will do while you are prepping the onion-fig mixture and wish you had another toast to eat when you are done with the first...



2 slices your favorite bread

1/2 cup red onion, sliced into half moons

4 figs, sliced into 4 or 5 slices lengthwise

1 Tbsp red wine

2 tsps red wine vinegar

1/4 tsp fresh thyme leaves, chopped

2 Tbsps shaved Parmesan

1 tsp runny honey

Salt to taste


Put the red onion, red wine, red wine vinegar, the thyme and some salt in a small saucepan. Cook over medium heat, stirring from time to time, until the onion has started to soften and the liquid has reduced and started to become syrupy.


Add the figs to the mixture and put the toast in the toaster.


Cook the mixture for a couple of minutes (or until the toast pops up) to warm the figs through, stirring occasionally.


Place the toast on a plate and heap half of the onion-fig mixture on each piece of toast. Drizzle each with half of the honey and half of the Parmesan shavings.


Voilà, lunch.



This was a six minute and eight second to the table dish.
